Summer Beet Salad VE DF GF

Beetroot leaves were originally the only part of the plant eaten but then we discovered how delicious the rest of the plant was. Packed with essential nutrients, they are a great source of fibre, potassium, iron and vitamin C. Helps lower blood pressure and improves blood flow. Go beetroot

Ingredients

3 mixed colour beetroot-try anyone’s you like

250grm radishes-finely sliced

1/4c toasted mixed seeds/nuts-I like sesame, pumpkin and almonds

250grm cherry tomatoes

Dressing

3Tbsp olive oil

2Tbsp pomegranate molasses

2tsp red wine vinegar

2tsp maple syrup

juice of 1 lemon-zest and freeze for future recipes

Method

Peel and finely slice beetroot, mix together with the other salad ingredients.


In a separate bowl, mix the dressing ingredients together, I do find sometimes it’s not tart enough for me so I end up adding more molasses but just do it to your tastes.

Pour the dressing over the salad ingredients and mix all together. If you want to add some fresh Italian parsley roughly chopped up or maybe even some watercress.

This salad is so easy and quick to put together and it really shows off the beautiful colours of all the different types of beetroot. Perfect with a bbq on a hot summer’s night or between 2 pieces of crusty ciabatta slices. Yu
