
This is a quick and easy recipe that can be whipped up in moments. It doesn’t need any fancy equipment, just a blender or food processor. Mix and match the fruit to your liking, the world is your oyster when it comes to this recipe just get in there and try it out

Ingredients
approx 500grms of your favourite fruit or what’s in season
250grm bananas-sliced
1/2c coconut yogurt
1/2c coconut cream
1/4c maple syrup
1 vanilla bean scraped
Method
Cut up the fruit in manageable pieces about 2cm in size and lay out on a tray in a single. Add the bananas to the tray as well. Slide into the freezer and leave till solid.
Place the fruit into blender and remaining ingredients. Blend for 2-3 mins or till smooth and creamy, stop and scrape the side as needed. Check the flavour, more sweetness if needed(this will depend on the sweetness of your fruit) Serve immediately as a soft serve or freeze till firm. Now this ice cream will freeze very hard so take it out to soften for 10mins.
Nothing beats a fruity ice cream and now you can have it there whenever you need it. My favourite combination it blueberry and mango but your ice cream is only as limited as your imagination
